I've been cooking since I was a little kid. My recipes are based on trial and error, along with studying cookbooks, family recipes, blogs and cooking shows. Some of the veggies and herbs I use are grown in my garden. Yay sustainability! I'm working on making my yard into an edible landscape. It's really fun to go out in the garden and pick your veggies for dinner!

Bing Cherry & Apple Pistachio Crisp

My Mom used to make Apple Crisp all the time when we were growing up. I think it was her way of getting us to eat more fruit and oatmeal, but we loved it.  Brown sugar, vanilla, apples, salt, butter and cinnamon? Name something not to love about this.

This is a variation on my Mom’s recipe, with cherries added because they were on sale at the store yesterday, and crushed pistachios because I love pistachios. This came out so delicious that I couldn’t stop eating bite after bite. Yum!

Pre heat oven to 350. Butter a casserole dish.

Peel and slice 3 Granny Smith apples. Squeese the juice of 1 whole fresh lemon over the apples. This becomes part of the sauce and also helps prevent the apples from browning.

Pit 1- 2 cups bing cherries. I don’t have a cherry pitter, so I just used a paring knife and went around the pit of each cherry. This took only about 10 minutes. It sounds like a  tedious job, but to me it was fun, and delicious because you get to eat as many cherries as you  can while you perform this task.

Mix the cherries with the apples & lemon,  along with 1 tsp  vanilla, sprinkle of cinnamon, 1 tsp corn starch, and a bit of salt.

Shell some pistachios, about 1/2 cup. Crush them with a mortar and pestle of food processor into big crumbs.

Mix the pistachios with 1 cup oatmeal, 1/4 c butter, 2 tsp sugar, 1/4 c brown sugar, dash of cinnamon, 1/2 tsp kosher salt. I use my hands, freshly washed, to combine the butter with the oatmeal, pistachios and spices. 

Bake for 25 - 30 min at 350 until bubbly and sweet. Serve over ice cream for a real treat!

Gluten Free Oatmeal Blueberry Pancakes

These came out so light and fluffy! It was my first time making gluten free pancakes and I was happily surprised that I could not tell the difference.

I used a combo of Arrowhead Mills and Bobs Red Mill gluten free baking mixes to make these, so they were very easy. The baking powder (which helps the pancakes to rise and become fluffy) and Xanthan gum are already in the mix. I combined the two brands because they had different kinds of flour. I also added 1/4 cup of organic oatmeal for extra texture and nutrition. Yum! 

For 2-3 pancakes: combine 1/2 cup Arrowhead Mills gluten free baking mix, 1/4 cup Bobs Red Mill gluten free baking mix, 1/4 cup organic oatmeal, 1 tblsp organic olive oil, 1 organic egg, 1/2 cup organic milk. Be careful not to overmix. 

Heat your skillet and add a little organic butter, pour 1/2 cup of the batter on the hot skillet and dot with frozen organic blueberries. Flip after a minute or so. The edges show signs of being cooked when they pull up a bit from the pan. 

Serve with fresh fruit and maple syrup. Yum!

RD Oatmeal

I stole the basic recipe from my friend Reed. I walked into his house one morning and his beautiful wife has this dish of blueberry oatmeal.  I was all, “Where did you get that?!” She said, “Reed made it!” 

Oatmeal can be so boring that you’re tempted to drown it in butter and sugar. That pretty much defeats the purpose. This version is very healthy, but also tastes fresh and delicious. And the berries are so good when they’re hot. This is so easy that you can do it before coffee.

Here’s how to make it:

Cook oatmeal according to package directions. At the end of cooking, just before the oatmeal is done, add some frozen blueberries and raspberries. Turn off the heat, cover the pot and let the berries steam in the hot oatmeal for about 2 - 3 minutes. Serve with a big drizzle of honey. Yum!
