Christmas Pickles
I love making pickles. Taking the time to do this when I have a million other things I’m supposed to be doing was my Christmas gift to myself. Pickle making is very scientific and fun. These jars are going to family, friends and neighbors today.
Make sure to taste the vinegar sugar mixture to adjust the sweet/ spicy / salty balance before pouring it over the vegetables. I had to adjust mine twice, adding extra salt and some red pepper flakes.
Here are the steps to pickle making in a nutshell: First you sterilize the jars, then blanch the organic veggies and shock them in ice water. Pack the jars with the veggies. Add vinegar, salt, organic sugar and pickling spices including allspice berries, coriander seeds, red & black peppercorns, star anise, fennel seeds, cloves, kosher salt and black pepper the blanching water to make a healthy, vitamin rich brine. Add the brine & spices to the jars, removing any air bubbles with a chopstick. Wipe the rims of the jars with a clean cloth. Seal the jars with sterilized lids and bands. Process pickles in a covered, boiling water canning pot for 15 to 30 minutes, depending on the size of the jars. The last step is to carefully remove the hot jars from the pot with the jar lifter thingy.

Yesterday was our Wedding Anniversary. My husband is the best! I am truly lucky to have this funny, handsome and super smart man in my life. I made him his favorite cookies. He took us out to eat at the fancy steak restaurant in our neighborhood. We split the wedge salad, oysters on the half shell, filet mignon and a giant baked potato. It was delicious and really fun!
The cookies in this photo are his favorite that I make. They’re easy and delicious. I use the basic recipe from Joy of Cooking and then add Organic Chocolate chips.
Heat oven to 375
Cream 1/2 cup butter with 1/2 cup brown sugar and 1/2 cup granulated sugar. In this first step I like to really beat the butter and sugars for a few minutes to make them very creamy. Next, Add 1 cup peanut butter, 1/2 tsp vanilla and 1 egg.
Sift 1 1/2 cups flour with 1/2 tsp baking soda and 1/2 tsp salt . Add the flour mixture to the other ingredients. Mix in by hand 1/2 bag of semi sweet chocolate chips.
Roll into 1 inch balls. Flatten with a fork dipped in sugar.
Bake for 8 to 10 minutes until they just start to turn golden.

I’m making Sugar Cookies for gift baskets. Painting them is fun. I used the basic sugar cookie recipe in Joy of Cooking. The icing is just powdered sugar mixed with a teeny bit of water, then some gel food coloring swirled in.
Pistachio Cranberry Snowball Cookies
I love pistachios, they’re my favorite nuts of all time. These cookies are so yummy and quick! And they have a “snowy & red & green” theme, which is so pretty and Christmasy.
In a food processor combine 3/4 cup organic powdered sugar, 1 cup organic butter, 1 tsp salt and pulse till combined. Add 1 cup ground pistachios, 1/4 cup dried cranberries and pulse a few times till combined. Now add 2 to 2 1/2 cups organic all purpose flour and pulse just a few times till a bit of a dough ball forms, but most of it is still crumbly. It’s important not to over process the dough or your cookies will be tough.
Now turn the crumbly dough onto a floured work surface and knead together a few times till it all comes together, being careful not to overwork the dough.
Form the dough into a rectangle and place it in a plastic bag in the fridge for at least 2 hours or overnight.
Cut the rectangle into small squares and round out the edges of your squares to make balls. Bake at 350 for 10 minutes till cooked.
Dust with powdered sugar on all sides.
