Sweet and Spicy Sesame Chicken Sandwich
This was so delicious. I made these sandwiches for lunch yesterday and both of us were like “Mmmf, this is so good…” , ”mmmfh, mmm, oh my god, so good”, ”mmmpf, delicious”, “so good.”. Have you ever had that conversation? I hope so.
Make a marinade with the juice of 1 tangerine or orange, 2 tblsp apricot jelly, 2 tsp soy sauce, 1 tsp fish sauce, 1 tsp sesame oil, 1 inch of fresh grated ginger, 3 smashed and chopped garlic cloves, a big sprinkle of black sesame seeds, salt, pepper and red pepper flakes.
In a roasting pan, place two or more pieces of organic chicken. Coat the chicken with the marinade. Bake at 425 for 15 minutes, reduce the heat to 350 and continue cooking for another 30 minutes, basting with the pan juices every 10 minutes or so, until the chicken is cooked through. A thermometer should read at least 165.
Toast any bread you have, and dress with a little mayo. Add the sliced cooked chicken along with shredded purple cabbage and carrots, sliced peppers, cucumbers, green onions and top with miso dressing.
For the miso dressing combine: 2 tblsp Organic non GMO miso paste, 1 tsp organic sugar, 1 tblsp organic canola oil, 1tsp sesame oil, 1/2 inch grated ginger and 2 smashed garlic cloves, and 1 tblsp organic soy sauce. Delicious!
Garlicky Chicken Sandwich with Swiss Cheese, Avocado and Sun Dried Tomatoes
This was our lunch today and features Romaine lettuce from the edible front yard garden. Yumm! This is easy, I bought all the other ingredients from TJ’s this morning, including the ciabatta rolls.
Heat a skillet to med high, add a little grape seed oil. Season boneless skinless chicken thighs with salt and pepper. Add the chicken pieces to the hot pan and don’t move them until they get a golden crust on the bottom. Crush 2 cloves garlic with a garlic press, spread the raw garlic on the uncooked side, flip and cover, leaving the lid off at the side to let some steam escape. Keep cooking until cooked through and the juices have reduced a little. About 10-15 minutes. Add chopped Swiss cheese and partially cover again until melted. Remove to a plate and let rest for a minute.
Cut ciabatta rolls in half and toast under the broiler or in a toaster oven being careful not to burn the tops of them like I did.
Slice avocados, shred lettuce. Spread a little mayo on the top bun, add some sun dried tomatoes, julienned or sliced if they aren’t already. Place the chicken on the bottom, add shredded lettuce and avocado. Season with salt and pepper. Yum!
We made these King Daddy Club sandwiches for lunch today after walking for more than an hour on one of the most beautiful autumn days ever. I picked this ripe tomato from the front yard garden. Having a veggie garden really makes me appreciate the little things. Even though times are tough, Life is sweet!
