Some of the veggies and herbs I use are grown in my garden. Yay sustainability!
I'm working on making my yard into an edible landscape. It's really fun to go out in the garden and pick your veggies for dinner!
Fried Green Tomatoes with Peach & Cherry Salsa
The most gigantic blue/green beetle on Earth flew into my kitchen while I was cooking and photographing this dish. I’d opened the screen door to let more light in the room for the photos. Then the kitchen got a little smokey because I had the pan turned up too high. I heard a loud buzzzzz at the door, turned around, and a gargantuan insect was buzzing all around the kitchen table. This bug was the size of a hummingbird and twice as loud. He was very beautiful, shiny green, blue, and black with big black wings. He was quite menacing though! How far would this beetle go to get some fried green tomato? My brave dog Jack saved the day by barking at it and chasing it out. He even had the beetle in his mouth for a second. I yelled,” Jack, no! Leave it!” Then he let the bug go and it flew away into the yard. Yipes!! I’m lucky to be alive to tell this story. I mean that in a general way.
Slice some green tomatoes from your garden, dip them in egg scrambled with a little milk. Coat with cornmeal mixed with a little flour, salt, pepper, smoked paprika, and chili ancho powder. Fry in a cast iron skillet in a little bit of oil. Garnish with fresh fruit salsa made by chopping fresh fruit, and dressing it with red pepper flakes, honey, lemon juice, lemon zest and some fresh chopped herbs. I used parsley. This was really fresh, crunchy and yummy!
