Cure for a Cold
Homemade Chicken Soup
This really works as a remedy for a cold. I know because I have a cold, and since making this for lunch, I feel well enough to take pics and write down how I made it. I guess you can just buy canned soup, but it’s always so salty. Plus, if you’re laying on the couch watching tv, why not enjoy the yummy aroma of soup cooking.
In a large pot, 1 container organic low sodium chicken stock, 1 organic boneless skinless chicken breast, ( you’ll cut or shred it after it’s cooked) 1 medium onion, 2 chopped carrots, 1 chopped parsnip, 2 chopped celery stalks, 3 smashed garlic cloves, 1 red potato cut in quarters, 1/4 cup fresh chopped parsley, 1 bay leaf, salt and celery salt & pepper.
Bring to a boil, then turn the heat down and simmer on low till the chicken is cooked. Be careful not to boil the soup or it’ll get foamy and the chicken will become tough.
Once your chicken is cooked through, remove it to a plate and cut or shred, and then add it back to the pot. Taste the soup. If it’s bland, add more salt or more celery salt. You could even add a bullion cube or bit of concentrated chicken broth for more flavor.
Add some egg noodles if you like and simmer till they’re tender.
Garnish with some lemon zest, fresh lemon juice, and a bit of cayenne pepper to taste.
This makes a lot of soup! Yum! Feel better!
