Everything I post on this blog I make from scratch using fresh wholesome ingredients.. I've been cooking since I was a little kid.

My recipes are based on trial and error, along with studying cookbooks, family recipes, blogs and cooking shows.

Some of the veggies and herbs I use are grown in my garden. Yay sustainability!
I'm working on making my yard into an edible landscape. It's really fun to go out in the garden and pick your veggies for dinner!
I'm helping as many people as I can to plant edible gardens in their yards too. It's hard work but it's really fun!

    Roasted Potato and Chard Quesadilla

    This would be a great way to get your kids to eat greens because it’s completely delicious. And it’s easy and cheap, especially if you grow your own chard. 

    I saw a similar recipe on Epicurious, but they used goat cheese, mustard greens, and flour tortillas. I used what I had in the house: leftover roasted potatoes, corn tortillas, chard & celery from the garden, cheddar cheese and queso fresco.

    I wasn’t originally intending to use celery. But when I went out to the garden to cut some chard, the celery is growing right next to it, and it’s good for me, so I thought what the hell. I’m glad I added it because it had a nice crunch next to the soft potatoes, greens and cheese.

    For the roasted potatoes: Toss diced potatoes with a drizzle of olive oil, salt, pepper and chopped shallot or onion. Roast at 350 for 20 -25 minutes until cooked.

    Saute any kind of greens in a skillet with a little olive oil. Chop celery, olives, peppers or anything else you have on hand and add those. Chop some fresh cilantro. Grate cheese. I used Irish Cheddar and Queso Fresco.

    Combine the filling ingredients, layer between two tortillas along with a shake of red pepper flakes if you like it spicy. Cook on both sides until melty and amazing. Serve with vinegary hot sauce! Yum!!
