Chicken Apple Hash with Cinnamon & Kale
It’s sunny and blustery today here in Southern CA. The winds are blowing like crazy! Our houseguest just left on a road trip to San Francisco for a few days. He and a bunch of our friends are in an Irish Punk Band called The Mighty Regis, or TMR, and they’re doing the first shows of their spring tour in San Francisco this weekend. They’re driving all across the country between now, through St Patrick’s Day, and until the end of March. Anyway, talking about the tour with our friend got me dreaming about road trips and food. Come to think of it, just about anything gets me thinking about food. You’re having a baby? Congratulations! I wonder what’s on the menu at the shower? It’s your Nana’s 100 birthday? How nice, I hope they’re serving finger sandwiches at the luncheon. You’re going to become an astronaut! That’s amazing! I wonder what freeze dried cheddar cheese tastes like?
I a large skillet, saute 1 small chopped shallot, 1 chopped peeled apple, 1 russet potato, grated, rinsed and dried thoroughly, 1 small zucchini. Let these get a little color on them and flip. Add 2 chicken apple sausages. Wash, stem, and chop some kale, and add that. Season with some cinnamon, smoked paprika or ancho chili powder, a big pinch of dried basil, and salt & pepper. Flip and cook this until crispy and cooked through. Add extra olive oil or butter to the skillet if it’s not crisping up to your liking.
Meanwhile: Boil some water, add salt and a tiny bit of vinegar and poach some eggs. Serve on top of your hash. Yum!
