White Bean Soup with Stars
This was easy, cheap and delicious. And it was improvised. I really didn’t think we had anything for lunch in the house. Then I remembered the can of white beans in the pantry, the basic veggies I always try to have on hand, carrots, celery and onion in the crisper drawer, fresh parsley growing in the front yard and tiny stars pasta I had just purchased at the Italian Deli. Making soup is easy, healthy and fun.
In a soup pot, saute one onion, 2 stalks celery and 2 carrots, (chopped) in a little bit of olive oil. Season with salt and pepper. Add 2 smashed and crushed garlic cloves, one carton of veggie or chicken stock and one can of rinsed and drained Canelli or white beans. Bring to a boil and add 1/4 cup small soup pasta, turning the heat down to a simmer. The small pasta cooks quickly, which is nice if you are always starving like I am. Add 1 tblsp chopped parsley and some dried basil. Serve with freshly grated parmesan cheese and garlic bread.
