Pepper Poached Huevos Rancheros
When I went out to my garden this morning I found this beautiful ripe Anaheim pepper. I knew it had to become part of my breakfast. It was so perfectly shaped I didn’t want to chop it into little pieces, so I decided to cut it in half and poach my eggs in the two halves.
First I made a ranchero sauce: Chop 1/2 sweet onion, saute in olive oil. Add 1 can whole peeled tomatoes, blended, 2 chopped garlic cloves, & 1 can of black beans, rinsed and drained. Season with salt, pepper and 1/2 tsp Ancho chili powder. Let the sauce cook down for a few minutes.
Heat oven to 400.
Cut peppers in half and remove the seeds. Place some of the ranchero sauce in the bottom of a baking dish. (Save the rest for chili or to make this again another day.) Add the pepper halves and bake for 5 minutes to cook the peppers a bit. Remove from the oven and carefully crack one egg into each. Top with some cheddar cheese and bake till the eggs are cooked, about 10 to 15 minutes.
Cut some tortillas into quarters and spray with canola spray. Bake the tortillas on a cookie sheet with the eggs at 400 for 3 - 5 mins till crisp.
This was one of the most delicious breakfasts I’ve ever made! Yum!
