This is easy and uses canned tomatoes and frozen vegetables, so it’s a good thing to make when you think you don’t have any food in the house.
Chop 1 small onion and 2 garlic cloves, sauté in a soup pot in a little olive oil. Add chopped celery and carrots, season with salt and pepper. Saute until softened, add 1 large can chopped tomatoes, 2 cups water, 1 tsp chicken or veggie base, fresh chopped basil, salt and pepper, any chopped fresh or frozen vegetables you have on hand. I used frozen peas, leftover red bell pepper and yellow squash. Simmer for 25 minutes until it all comes together. Add any small cooked pasta. Yum!
